Compensation: $15-$17 + Tip Sharing
Purpose of the Position
Cook and assemble tacos as they are ordered and produce line prep items as listed on the daily prep sheet; according to Taco Samba's standards and recipes.
Taco Responsibilities:
• Produces perfect tacos on the line per customer orders in the same sequence as they were ordered.
• Verifies tickets
• Keep line clean while working
• Communicates with plancha, fry/garnish, and torta listens for ticket times and is responsive
• Keeps kitchen clean and organized including the cooler
• Details kitchen equipment daily
• Upholds Taco Samba's quality standards at all times
• Properly breaks down station and cleans for the next shift, restocks if necessary
• Produce line prep items as listed on the prep sheet
• Properly labels, dates and fills pans correctly for all produced food items
• Properly sets up station according to diagram with appropriate backups to get through their shift.
• Practices proper food safety and HACCP techniques, FIFO
• Prepares food according to Taco Samba's and Food handlers guidelines
Plancha Responsibilities:
• Cooks meats and eggs (per customer orders) in the same sequence as they are ordered
• Verifies tickets, keep plancha clean while working, line sweeps,
• Preparing tortillas and reheating braised meats, corn, sopas, and the black and refried beans for the hot line.
• Preparing Tortas and Breakfast items as ordered
• Produce line prep items as listed on the prep sheet
• Properly labels, dates and fills pans correctly for all produced food items
• Properly sets up station according to diagram with appropriate backups to get through their shift.
• Properly breaks down station and cleans for the next shift, restocks if necessary
• Practices proper food safety and HACCP techniques, FIFO
• Communicates with fellow staff members to ensure quality product and ticket times.
• Follows all Taco Samba's recipes and procedures
• Preparation of other items as requested by management
• Keeps kitchen clean and organized including the coolers
• Details kitchen equipment daily
• Clear understanding of the recipe bible and how to care for it
Fry/Garnish Responsibilities:
• Garnishes perfect tacos on the line per customer orders in the same sequence as they were ordered.
• Verifies tickets & calls guests to pick up food
• Frys food items needed to stuff tacos & tortas
• Keep line clean while working
• Properly labels, dates, and fills pans correctly for all produced food items
• Properly sets up station according to diagram with appropriate backups to get through their shift.
• Properly breaks down station and cleans for the next shift, restocks if necessary
• Practices proper food safety and HACCP techniques, FIFO
• Does not over batch only fry ahead during busy times
• Fries chips & chicharrones as needed
• Communicates with plancha and taco, listens for ticket times and is responsive
• Details kitchen equipment daily
• May assist with grill or taco line depending on need
• Clear understanding of the recipe bible and how to care for it
• Keeps kitchen clean and organized including the cooler
• Verifies tickets, keep fryers clean while working, line sweeps,
• May be asked to assist with other duties outside of this job description
Torta Responsibilities:
• Verifies tickets & calls guests to pick up food
• Builds all dishes required of the station to proper specs
• Keep line clean while working
• Properly labels, dates, and fills pans correctly for all produced food items
• Properly sets up station according to diagram with appropriate backups to get through their shift.
• Properly breaks down station and cleans for the next shift, restocks if necessary
• Practices proper food safety and HACCP techniques, FIFO
• Does not over batch food items
• Communicates with plancha and taco, listens for ticket times and is responsive
• Details kitchen equipment daily
• May assist with grill or taco line depending on need
• Clear understanding of the recipe bible and how to care for it
• Keeps kitchen clean and organized including the cooler
• Verifies tickets, keep fryers clean while working, line sweeps,
• May be asked to assist with other duties outside of this job description
EXPERIENCE AND SKILLS:
• Knowledge of kitchen equipment to include: fryer, char grill, plancha, stove, robot coupes, emersion blender, dicers, mandolin and scales
• Basic knife safety
• Basic communication and reading
• Basic math: addition and subtraction
• Ability to multi-task
• Kitchen experience a plus
• Must be 18 years of age
• Food Safety Certification preferred
