A prep cook at Jon & Vinny’s will work closely with the managing chef on duty to work through the prep list. They are trusted to follow recipes closely and ask for guidance when needed. Prep cooks are responsible for executing recipes and following all health and safety rules and regulations.

All cooks need to understand the importance of producing beautiful, consistent, delicious food. Cooks are expected to taste all prep they create for quality, understand how to check produce freshness, texture and flavor to guidelines laid out by chef.
Cooks need to be aware that they are always “on stage” and maintain a beautiful presentation or display of market produce or seasonal ingredients. Behavior on the line should be professional at all times to reflect the open kitchen mentality. Physical appearance should be professional and reflect an attention to hygiene and cleanliness.
Cleanliness is at the forefront of station responsibilities - cooks need to understand health department rules regarding safety and abide by all temperature, chemical and physical safety measures. Each station should be organized according to the systems applicable to the station and dish execution; bowls should be cleaned and stacked, cutting boards wiped, towels folded, sanitation buckets available with a towel, garbage emptied regularly, floors swept, dish tubs organized.
